Meet the One Can Trust Team
The governance, strategy and overall responsibility for delivery of the operation lies with the Board of Trustees.
Members as follows:

Kerri Byrne
Kerri joined One Can Trust as a Trustee in spring 2023 having worked in various sectors

including charity, NHS and local authority, mainly in project management and commissioning. Kerri stepped up as the new chair of One Can Trust trustees in November 2024.
She is also a governor at the local primary school. Kerri grew up in the Wycombe area and now lives in Princes Risborough with her husband, two young children and bearded dragon, and enjoys singing in choirs.

Russell Down
Russell joined One Can as a volunteer in 2022 and became a trustee in 2024. Russell stepped

up as the new treasurer of One Can Trust in November 2024.
He is a qualified accountant and spent six years working as Finance Director for a company based in Dubai. After returning from Dubai he worked as a Director for two companies in the construction industry before retiring in 2022. He enjoys travelling and keeping fit through cycling and kayaking. He has four grown up children and lives in Bourne End.

Sarfaraz Raja
Sarfaraz, also known as Saf, was born and has lived in High Wycombe all his life. Saf is married

and has three children of school age; all attend local schools. Saf serves as a governor at Hamilton Academy and the Purchasing Manager for a Wycombe based specialist Electronic Engineering company.
At present, Saf is Councillor for Terriers and Amersham Hill ward at Buckinghamshire Council.
He was honoured to be chosen as Mayor for 2018-19, and his Mayor’s Appeal raised over £27,000 for his chosen charity. Saf helped One Can Trust before joining as a Trustee early in 2021.

Ruth Lethem
Ruth joined the One Can Trust as a Trustee in 2023; she does this alongside a full-time position

working as the manager within a Parliamentary team. Until recently Ruth was a Retail Area Manager for a high street food brand who she worked for nearly 20 years.
Ruth lives in High Wycombe with her husband and step-daughter, they moved to High Wycombe in 2018 after living and working in West London for many years. When she’s not working, Ruth enjoys reading and usually read around one book per week, she’s also a keen baker.

Liz Smith
Liz joined One Can Trust as a volunteer in 2024 working alongside the children’s clothes bank team.

She lived previously in London working in the sales and marketing sector as well as events and hospitality plus some secretarial work for the financial market.
Her family moved to Beaconsfield 11 years ago, she is a busy wife and mum with two energetic children. Liz enjoys other volunteer roles and fundraising. She helps with her children’s schools and PTA committees, plus a local Nearly New Uniform Shop. Liz loves to get to the gym when she can and yoga classes.

Jacqui Fromberg
Jacqui is a retired psychotherapist. She now considers herself a professional grandma,

caring for four grandchildren who keep her young at heart. Living in Great Missenden for 35 years, she has always been passionate about community projects. In her spare time, Jacqui enjoys yoga, dancing and singing in Rock Choir.

Caroline Ko
Caroline joined as a trustee in September 2025 and is also the Company Secretary.

She qualified as a solicitor in 2003 and since then has worked full time practising all aspects of commercial property law. For the last five years has been a partner in a boutique law firm in London.
She has lived in Penn for the last ten years, and has three children. She has a passion for singing – especially musical theatre and tries to go to the theatre as frequently as possible. She is a member of Rock Choir in Amersham.
In her free time she likes to go on her Peloton bike and swim and spend time with her family.

Jack Cooper
Jack joined One Can as a Trustee in July 2025. His background is in HR, working with a

number of businesses in the Finance and Technology sectors. He lives in Marlow with his young family and in his tiny amount of spare time can be found riding his bike around the Chilterns or kayaking on the river.
Staff
A small team of staff members are responsible for the day to day running of the operation.

Sonya Batchelor
Sonya was born in Australia and now lives in Beaconsfield with her husband; their two active boys and two rescue cats.

Sonya is a former Vice President for Baker Hughes and commenced her career at BP. She has worked in a variety of Executive leadership positions in the UK and abroad.
She started her career in marketing, before moving into commercial operational roles then specialising in strategy development and transformation. She is passionate about Social sustainability (from social impact to DEI), enterprise risk management and leveraging her commercial acumen. Sonya loves skiing, kick boxing and travelling (having been to all 7 continents). Sonya joined the One Can Trust as a Trustee in April 2025 and in June 2025, stepped down as a Trustee to take on the role of Interim CEO.

Jo Belshaw - Operations Manager
Jo joined the organisation in June 2020 as the Food Procurement Manager. Her role was

primarily to build relationships with schools, churches, supermarkets, local businesses etc to ensure the foodbank had enough food to meet demand. Jo stepped up as the Operations Manager in January 2022. In her spare time, Jo enjoys boxing and circuit training.

Cara Nightingale - Food Programmes Manager

One Can as Operations Manager in May 2020. Cara has two small children, Charlie and Poppy-Rose and lives in Wycombe. Recently returning from maternity leave, Cara has taken on a new role as Food Programmes Manager which aligns with Cara’s main passion of all things food.

Kim Starkey - Community Support Programme Manager

path having previously worked mostly in apprenticeships tutoring and assessing learners in achieving qualifications in childcare, business administration and management.
Kim is now responsible for running One Can’s Insight Programme alongside a wonderful team of volunteers. In her spare time, Kim loves walking her dog, yoga and the odd gin and tonic!

Jayne Motlagh - Referrals and Statistics Manager

Helen Foster - Food Supply Manager
Helen comes to One Can after spending nearly ten years as a Career Coach and 20 years in

broadcasting producing radio programmes. She is a people person and cares passionately about their welfare. When she isn’t at One Can, Helen is volunteering (sometimes running) at Park Run and Wycombe Rugby Club or providing a taxi service to her teenage children.

Viki Hockley - Volunteer Coordinator
Viki joined the One Can Team in June 2023 as our Volunteer Coordinator.

Ros Taylor - Food Bank Administrator

Shannon Doolan - Community Support Administrator

Jo Macken - Food Bank Administrator

of her career in Customer Service and Hospitality. Jo is delighted to be joining a worthy organisation and looking forward to her new role. Outside of work, Jo enjoys being involved with her children’s love of cricket and rugby in addition to long walks with her rescue dog, Cassie.

Carrie Chivers - Community support worker
Carrie joined the community support team as a community support worker in June 2023.

With her qualifications in counselling, Carrie was perfect for the role and with a background in running coffee shops, she later also became the Business Manager of Hills Café. Carrie is kept busy by her four children, two small grandchildren and enjoys going to the gym and climbing mountains.

Neil Scott - Warehouse, Health and Safety Manager
Neil is our Warehouse, Health and Safety Manager. He joined One Can Trust in November

2022 and lives in Flackwell Heath with his wife. Neil has two grown up daughters also. In his spare time, Neil enjoys walking, travelling and meeting friends.
Volunteers
The operation could not function without an amazing team of 220 volunteers who freely give their time to help in various ways. Their activities include the collection of food from supermarkets, sorting of food, picking food parcels, making up recipe bags, delivering parcels and helping with fundraising events.
